Eggplant Lasagna

One of the things we miss most about being (mostly) wheat-free is Italian food. Luckily, wheat-free pizza crust is becoming more widespread, brown rice & quinoa spiral pasta is a standard Trader Joe's item, and rice flour for frying is commonly available in the flour or "green" section of most supermarkets. If you wanna take it back to basics, or are part of the pale-craze, you've got to break it down to basic ingredients. Instead of noodles, why not just use a big, firm, chewy vegetable? Eggplant will do nicely.

Our Eggplant Lasagna recipe has 5 different layers to it: eggplant, fresh spinach & tomato, meat sauce, whipped ricotta cheese, and tomato marinara sauce.
Ingredients:

Layers:
eggplant
tomatoes
tomato marinara sauce
spinach
cheese (grated)
-ricotta cheese-flax seed or egg (mixed w/ ricotta)
garlic
basil
-
meat
ground beef (grass-fed)
lentils
onions
Meat Sauce
We love to add in lentils to our ground beef - not only does it diversify your nutrient profile, but they also take on the same taste as whatever they're cooked in; that costly grass-fed beef goes much further. Cook dry lentils just like you cook rice or potatoes - cover 'em in water, heat, and wait 'til they're mushy. Add to an oiled pan with your thawed ground beef, and cook up until the beef is no longer pink. Optional additions: onions, garlic.

Eggplant
Take a big eggplant and slice it lengthwise. Using your oil of choice, fry up the slices. You may wish to add rice flour to the slices to keep them juicy.
Whipped Ricotta Cheese
Place a large amount of ricotta cheese in a bowl with flax seeds, water, and dried basil flakes. Whip it good.

Layering
Layering can be the most fun or the most frustrating part. If it's the second one for you, call in your sous-chef to do the deed. Whoever the builder, we recommend EGGPLANT as the base layer. Other than that, you can choose how to stack your pack. Ours went like this:
